2010-Jul.25 Great Idea From John Thomas

Beef Fajita & Corn Salad with Salsa Ranch Dressing

Prep time: 15 mins. Cook time: 5 mins. Serves 4

1 - 12oz bag of frozen HEB fully cooked beef for fajitas...

1- 1/2 cups frozen corn...

1/2 cup of ranch dressing plus 2 tablespoons of salsa...

2 - medium tomatoes diced...

1- 8oz bag of shredded lettuce...

1 to 2 cups shredded cheddar cheese...

1- cup crushed tortilla chips...

Optional Ingredient: 1 or 2 avocados peeled and cut into wedges... Or guacamole and sour cream...

1. Heat fajitas in microwave according to package instructions. Cut into bite size pieces and set aside.

2. Heat a large skillet over medium heat. Spray skillet with non stick spray and saute corn 60 seconds or until warm. Remove skillet from heat.

3. Stir dressing and salsa into skillet with corn.

4. Arrange lettuce on individual plates or a serving platter. Spoon dressing mixture over lettuce.

Arrange beef tomatoes cheese and tortilla chips over top. Add guacamole and sour cream if desired. Serve :)

I decided not to do the serving platter, because not everyone likes all the same ingredients, so the individual plates are best.

Thanks John Thomas for the recipe and the groceries to make it. Yumm, Yumm....

You've gotta try this!

5 Minute Chocolate Mug Cake

5 MINUTE CHOCOLATE MUG CAKE

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (Micro Safe)

Add dry ingredients to mug, and mix well.
Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.EAT !
(this can serve 2 if you want to feel slightly more virtuous). And why is this the most dangerous cake recipe in the world? Because now we are all only 5 minutes away from chocolate cake at any time of the day or night!
